General Tso’s Shrimp with Garlic-Ginger Rice

  • In a small pot, combine rice, 1¼ cups water (2¼ cups for 4 servings), and a pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, 15-18 minutes.

  • Keep covered off heat until ready to serve.

  • While rice cooks, wash and dry produce.

  • Halve, core, and thinly slice bell pepper into strips. Peel and mince garlic.

  • Heat a drizzle of oil in a large pan over medium-high heat. Add bell pepper, coleslaw mix, a big pinch of salt, and pepper; cook, stirring occasionally, until softened and slightly browned, 3-5 minutes.

  • In the last minute of cooking, add garlic; cook until fragrant, 1-2 minutes more.

  • Turn off heat; transfer veggies to a large bowl. Wipe out pan.

  • Meanwhile, rinse shrimp* under cold water; pat very dry with paper towels.
  • In a second large bowl, whisk together tempura batter mix, ⅓ cup cold water, ½ tsp salt, and a pinch of chili flakes (⅔ cup water and 1 tsp salt for 4 servings). Season with pepper. TIP: If needed, add more water 1 TBSP at a time until mixture reaches a pancake-batter-like consistency.

  • Stir shrimp into batter until fully coated.

  • Heat a ¼-inch layer of oil in pan used for veggies over medium-high heat. 
  • Once oil is hot enough that a drop of batter sizzles when added to the pan, working in batches, add coated shrimp in a single layer. Cook until golden brown and cooked through, 2-3 minutes on the first side and 1-2 minutes on the second side.
  • Using a slotted spoon, transfer shrimp to a paper-towel-lined plate; immediately season with salt.
  • To bowl with veggies, add shrimp and General Tso’s sauce; toss to coat.

  • Fluff rice with a fork, then stir in garlic-ginger scallion paste.
  • Divide rice and shrimp and veggies between plates. Sprinkle shrimp and veggies with sesame seeds and as many remaining chili flakes as you like. Serve.
