Low-Lift Shrimp Tikka Masala Ramen

Cooking steps

Bring a large pot of salted water to a boil. Wash and dry produce.

Halve, core, and thinly slice bell pepper into strips. Set aside ¼ cup water (½ cup for 4 servings) to use in Step 3. Crush peanuts in their bag with a heavy-bottomed pan or rolling pin.
- Once water is boiling, add noodles to pot. Cook until tender, 1-2 minutes. Drain and rinse thoroughly under cold water, at least 30 seconds.

Rinse shrimp* under cold water, shaking off excess water.

Heat a large drizzle of oil in a large pan over medium-high heat. Add bell pepper; cook, stirring occasionally, until beginning to brown and soften, 2-4 minutes.

Add another drizzle of oil and shrimp. Cook, stirring occasionally, until shrimp are opaque and cooked through, 4-6 minutes. Season with salt and pepper.

Reduce heat to medium; add drained noodles, tikka masala sauce, 1 TBSP butter (2 TBSP for 4 servings), and reserved water. Cook, stirring, until sauce is warmed through and noodles are coated, 30-60 seconds. TIP: Add more splashes of water if noodles seem dry.

Divide ramen between bowls. Drizzle with yogurt. Sprinkle with peanuts. Tear cilantro and sprinkle over top; serve.
