Creamy Curry Spaghetti with Fried Eggs

Cooking steps

  • Bring a large pot of salted water to a boil. Wash and dry produce.
  • Dice tomato into ½-inch pieces.

  • Once water is boiling, add spaghetti to pot. Cook, stirring occasionally, until al dente, 9-11 minutes.
  • Turn off heat; drain spaghetti. Wipe out pot.

  • Heat a drizzle of oil in pot used for spaghetti over medium-high heat. Add garam masala and curry powder; cook, stirring constantly, until fragrant, about 30 seconds. TIP: If pot gets too hot, reduce or remove from heat. 
  • Add tomato paste; cook, stirring, until mixture darkens in color, about 1 minute.
  • Stir in ¼ cup water (⅓ cup for 4 servings), cream sauce base, stock concentrate, garlic powder, and a big pinch of sugar until combined.

  • Add drained spaghetti to pot with sauce. Stir in spinach a handful at a time until wilted. TIP: Adjust heat as needed. Spinach will give off moisture as it cooks, so don’t add more water until it’s all wilted! If pasta still seems dry at that point, stir in splashes of water until desired consistency is reached.
  • Stir in tomato and 1 tsp butter (2 tsp for 4 servings). Taste and season with more sugar, salt, and pepper as desired.

  • Heat a drizzle of oil in large pan over medium heat. Crack eggs* into pan and cover. (For 4 servings, you may need to work in batches.) Fry eggs to preference. Season with salt and pepper.
