Spicy Honey Garlic Lo Mein with Fried Eggs

Cooking steps

  • Bring a large pot of salted water to a boil. Wash and dry produce.
  • Trim and thinly slice scallions, separating whites from greens. Remove and discard any large stems from kale; cut into bite-size pieces if necessary.
  • In a small bowl, combine honey garlic sauce, soy sauce, garlic powder, and ⅓ cup water (⅔ cup for 4 servings).

  • Once water is boiling, add noodles to pot. Cook, stirring occasionally, until al dente, 5-7 minutes.
  • Drain noodles and set aside until ready to use in Step 4. (Reserve pot.)

  • Heat a large drizzle of oil in pot used for noodles over medium-high heat (make sure pot is dry before adding oil!). Add scallion whites and carrots; cook, stirring constantly, until just beginning to soften, 1-3 minutes.
  • Add kale; cook, stirring constantly, until wilted, 1-2 minutes more.

  • Reduce heat to medium and add drained noodles, sauce mixture, and 1 TBSP butter (2 TBSP for 4 servings) to pot; stir until everything is evenly coated. Taste and season with salt and pepper if desired.

  • When noodles are almost done, heat a drizzle of oil in a medium, preferably nonstick, pan over medium heat. (For 4 servings, use a large pan or fry eggs in batches.) 
  • Once hot, crack eggs* into pan and cover. Fry to preference. Season with salt and pepper.

  • Divide lo mein between plates. Top each with a fried egg and as much chili crisp as you like. Garnish with scallion greens. Serve.
