- Adjust rack to top position and preheat oven to 450 degrees. Wash and dry produce.
- Dice potatoes into ½-inch pieces.

- Toss potatoes in a medium microwave-safe bowl with a drizzle of olive oil, Southwest Spice Blend, salt, and pepper.
- Cover tightly with plastic wrap and microwave until potatoes are tender, 4-6 minutes. TIP: The bowl is hot! Let cool slightly before handling.

- Meanwhile, beat eggs in a small bowl. Add a drizzle of olive oil to oven-ready tray. (For 4 servings, add a drizzle of olive oil to both trays.)
- Transfer cooked potatoes to tray. Pour eggs over potatoes. (For 4 servings, evenly divide ingredients between two trays.)
- Bake on top rack (be sure your oven has preheated!) until eggs are set, 15-20 minutes. (For 4, bake two trays side by side on top rack.)

- While potatoes and eggs bake, place tortillas on a clean work surface. Spread refried beans across tortillas and sprinkle with Mexican cheese blend.
- Working in batches, place bean and cheese tortillas on a microwave-safe plate (it’s OK if they overlap some). Microwave until beans are warmed through and cheese begins to melt, 1-2 minutes.
- Divide tortillas between plates. Fill with potatoes and eggs. Top with salsa. Serve.
