Sweet & Sour Tofu Wraps
with Creamy Sesame Salad, Peanuts & Crispy Wonton Strips

Cooking steps

- Wash and dry produce.
- Roughly chop cilantro. Quarter lime.
- Pat tofu dry with paper towels, gently pressing to remove excess liquid (this will help it brown and crisp up in the pan). Slice crosswise into ¼-inch-thick planks; season with salt and pepper (you should have 12 planks; 24 planks for 4 servings).

- In a medium bowl (large bowl for 4 servings), combine sesame dressing, mayonnaise, salt, and pepper.
- Add cabbage and carrot mix, cilantro, and a squeeze of lime juice; toss until everything is evenly combined.
- Taste and season with more lime juice, salt, or pepper if desired.

- Heat a large drizzle of oil in a large, preferably nonstick, pan over medium-high heat. Add tofu; cook, undisturbed, until golden brown and crispy, 3-5 minutes per side. (For 4 servings, cook in batches, then toss all the tofu with the sauce after the last batch is finished.) TIP: Tofu can burn easily if your pan is too dry. Add another drizzle of oil as needed!
- Turn off heat; add sweet and sour sauce to pan. Stir and toss until tofu is coated.

- Gently crush peanuts in their bag.
- To bowl with dressed veggies, add arugula, crushed peanuts, and wonton strips; toss to combine.

- Wrap tortillas in damp paper towels and microwave until warm and pliable, 30 seconds.
- Place tortillas on a clean work surface. Fill bottom half of each with tofu and salad. Fold up bottom side over filling, then fold over left and right sides toward filling; roll up tortillas, starting with filled sides, to form wraps. (Don’t worry if you have trouble fitting all the salad—it’s just as tasty on the side!)
